Doesn’t it seem as though the Fourth of July always sneaks up on us? And once its here, then the realization that summer is half over rolls right through. Regardless, its one of my favorite holidays and favorite days of the year. It also happens to be my dad’s birthday – so a big ‘ole happy birthday wish to you. Its also a great day because its full of family time and delicious summer food. My addition to the menu today is this oh so fitting Red White and Blueberry Trifle.
Red, White, and Blueberry Trifle
- 10 oz. angel food cake, cut into 1 inch cubes
- 2 pints of strawberries
- 2 pints of blueberries
- 1 packet of sugar free white chocolate instant pudding mix
- 6 tbsp of sweetened condensed milk
- 1 1/2 cup cold water
- 12 oz. fat free frozen whipped topping, thawed
Whisk the condensed milk and water in a bowl. Whisk in the pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set; fold in the whipped topping.
Arrange half of the cake in the bottom of a 14-cup trifle dish. Sprinkle evenly with a layer of blueberries. Spread half of the cream mixture over the blueberries and gently spread (I piped it using a plastic bag and cut the corner off). Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then addmore blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a pretty pattern. Cover and refrigerate at least one 1 hour.
Devour. This is delicious. Its fat free and doesn’t taste like it. This trifle is a beautiful center piece for your Fourth of July celebration or a perfect dessert for any summer party, dinner, or get together.
